1 bag is enough for 1000g prepared fruit and 500g sugar or
750mL fruit juice and 400g sugar
Makes about 6 glasses of 200mL each
Directions:
1. Wash, stem or stone the fruits, then cut small or puree
2. Mix 1 bag of Gelfix with the sugar and mix with the fruit in a large pot and
bring to the boil while stirring
3. Cook for at least 3 minutes, stirring constantly
4. Carry out a gelling test: place 1-2 teaspoons of the hot mixture on a plate.
If it doesn't set, continue cooking for 1 minute while stirring
5. If necessary, remove the foam from the fruit mixture and immediately pour the
mixture into glasses up to the brim
6. Close the jar with the lid, turn it over immediately and leave it on the lid
for about 5 minutes
