Dr. Oetker Gelling Powder Super 3:1

This gelling powder is made with pectin from apples and citrus fruits.
1 bag is enough for 1000g prepared fruit and 350g sugar or
900mL fruit juice and 350g sugar
Makes about 6 glasses of 200mL each
Directions:
1. Wash, stem or stone the fruits, then cut small or puree
2. Mix 1 bag of gelling powder with the sugar and the fruit in a large pot and
bring to a boil while stirring
3. Cook for at least 3 minutes, stirring constantly
4. Carry out a gelling test: place 1-2 teaspoons of the hot mixture on a plate.
If it doesn't set, continue cooking for 1 minute while stirring
5. If necessary, remove the foam from the fruit mixture and immediately pour the
mixture into glasses up to the brim
6. Close the jar with the lid, turn it over immediately and leave it on the lid
for about 5 minutes
